Beef Curry

Ingredients:
1.5Kg stewing steak – cut into squares
3 tablespoons oil (45ml)
2 large onions - finely chopped
1 tablespoon grated fresh ginger root
4 cloves of garlic – finely chopped
4 tablespoons Mum’s curry powder – (see recipe "DLMM curry powder", under Extras)
1 teaspoon turmeric
2 teaspoon black mustard seeds
1 teaspoon salt
1 tablespoon malt vinegar
2 fresh chillies – (bird eye)
3 ripe tomatoes peeled & chopped (or 1 can chopped tomatoes – much easier!)


Method:
Tip: Prepare all the ingredients before you start cooking, (you can cut the meat with scissors while the onions are softening)
  • Heat oil in pressure cooker & gently fry onions, ginger & garlic until onions are soft & golden.
  • Add curry powder, turmeric & mustard seeds & stir. Cook for about a minute.
  • Add the salt & vinegar & stir.
  • Turn up the heat to high
  • Add the beef and stir well, until all of the meat is covered in spices.
  • Cut the chillies into the pan using scissors (be very careful, don’t get any chilli juice on your hands, it will burn eyes, nose, mouth, (or your bits if you go for a wee!))
  • Add the tomatoes, stir & the put on the lid.
  • Bring up to pressure then reduce heat & cook for about 1 hour. 
  • Leave pressure cooker to de-pressurize (takes about 10 minutes, you can release the last bit manually)
  • Serve with boiled rice, sprinkle with chopped fresh coriander leaves to be really fancy
